Cooking with Home Chef: Mushroom and Swiss Beef Burger Recipe

While I love cooking dinner, I hate going to the grocery store.  I’m a Libra, which makes choosing what to cook a struggle sometimes – we’re very indecisive people.  If I do manage to get myself to a grocery store, it’s usually because I got inspired by a Pinterest recipe that I thought would be a good idea, which quickly turns into a bad idea.  Cooking in my kitchen usually happens on the weekends when there’s more time and most important – energy!  So when I heard about a easy and quick to make meal kit like Home Chef, I was willing to try it.

My first delivery was a mushroom and swiss beef burger with truffle mayo and steak fries.  Just the thought of making something as this delicious kinda intimidated me.  After all, we’re talking about truffle mayo.  It doesn’t get fancier than that!  But it turns out it was actually the most easiest burger I’ve ever made in my life and it was delicious.

Before You Cook

Review all the ingredients that come in your Home Chef delivery meal box and read through the recipe before you start cooking.  You don’t want to miss any important instructions like rinsing all the produce.

Make the Steak Fries

Preheat the oven to 400 degrees and prepare a baking sheet with foil.  Next you want to cut the potatoes lengthwise into 1/2″ wedges.  Place the potatoes in 1 Tbsp. olive oil, 1/2 tsp. salt and 1/4 tsp pepper on prepared baking sheet and toss to evenly coat.  Spread into a single layer, avoiding overlap, and roast 12-15 minutes.  Remove from oven, flip the fries and cook an additional 12-15 minutes, or until fries are browned and crisp.  Remove from oven and set aside.

Prepare the Ingredients

Slice the tomato into 1/4″ rounds. Cut mushrooms into 1/4″ slices.  Peel onion and slice into thin rounds. Halve pretzel buns.

Form and Cook the Burgers

Warm up your grill pan, (I used my George Foreman Grill ) and lightly coat with a cooking spray.  Shape ground beef into two equal-sized patties slightly larger than the buns and season each side with 1/2 tsp salt and a pinch of pepper.  Place your patties on the hot grill and cook 4-6 minutes per side, or until burgers reach a good temperature.  When burgers are almost cooked to your liking, top it with swiss cheese and let it melt slightly.

Sauté the Mushrooms

Place a medium pan over medium heat and add 1 tsp. of olive oil.  Place mushrooms in hot pan and cook 5-8 minutes, stirring occasionally, until soft, aromatic, and caramelized.  Immediately remove from heat and set aside.

Make Truffle Mayo

Combine mayonnaise and truffle oil (start with a small amount, taste and add more if desired) in a small bowl.  Season with a pinch of salt and pepper and whisk until fully mixed.

Plate the Dish

If desired, lightly toast the the pretzel buns until warm.  Spread truffle mayo on tops and bottoms of buns.  Add arugula, tomato, onion, and burger patty to the bun.  Top burger with sautéed mushrooms and top bun.  Arrange fries in a pile next to the burger and serve with remaining mayo on the side.
