Last week, I was supposed to bake a Farmer John ham for our family Easter brunch. But my sister decided to change our menu to a Mexican Brunch theme instead. Needless to say, I got stuck with a 7lb. ham for just Frank & I. So I thought, why do I have to bake a ham only for special occasions? Screw it, I’m going all out on a Bourbon Glaze Ham, just because. Let me tell you, that has been the best ham I’ve ever made. I’ll share that recipe with you soon.

So you got the part where I mentioned that I baked a 7lb. ham for two, right? No, we didn’t eat it all. We invited Frank’s sister for dinner and asked her to take half, but we still had a good amount left for us. So this meant that I needed to get creative with leftovers. Sure it’s good enough to eat as is, but why not experiment with other ways to enjoy what’s left of this mouthwatering ham. There’s more to just ham sandwiches or ham and eggs for breakfast.
When I woke up this morning I thought about making chorizo con papa, which is Mexican sausage with potatoes. But I thought, wait! Let’s try making the ham with potatoes instead. It turned out delicious. You can taste a bit of sweetness from the bourbon and ham, and then it’s savory from the potatoes and spices. Oh my wow, so good.
Just like the chorizo con papa, which is a staple breakfast in Mexican culture, you could also eat it alone, in tacos, and burritos. Heck, you can even crack an egg over it and make it an American skillet. Don’t be afraid to shake things up with leftover ham, get creative and enjoy all the mixed flavors.
And most importantly, don’t wait for a special occasion to enjoy a Bourbon Glaze Ham.
Jamón con Papas – Skillet Ham with Potatoes Recipe
Ingredients
- 3 tablespoons vegetable oil
- 1 large onion
- 2 medium garlic cloves (minced)
- 2 cups cubed ham
- 6 medium red-skin potatoes cut into 1/2 inch cubes
- 1 teaspoon salt
- freshly ground black pepper
Instructions
- Heat the vegetable oil in a large, heavy skillet over medium heat. Add the diced onions and sauté until the onion is tender and translucent. Add the garlic and cook for 1 more minute.
- Add ham and diced potatoes, salt and pepper. Cover pan and cook for 10-15 minutes, or until potatoes are tender. Uncover and increase heat to medium-high. Continue cooking for about 8-10 minutes, occasionally turning, until the potatoes are golden.
- Taste and adjust the seasoning, if needed.
